Research Outline

Changes in consumer dietary behaviors that drive the food supply chain are essential to addressing issues of food sustainability, such as environmental impact, food waste, and plastic packaging. However, since these issues encompass a wide range of domains, there is no single definition of “sustainable and healthy dietary behaviors (SHDBs),” which refers to specific dietary practices that consumers should adopt to improve their health and protect the environment.

Therefore, I focus on achieving a comprehensive understanding and international comparison of SHDBs and their related factors, as well as analyzing dietary behavior patterns to promote them. Furthermore, I aim to integrate environmental science into these studies and apply life cycle assessment (LCA) methods to evaluate the environmental impact of each dietary behavior. By scientifically assessing the environmental consequences of various dietary behaviors, I can identify which behaviors should be prioritized. Based on this knowledge, I seek to propose practical behavioral guidelines for adopting SHDBs and ultimately develop and implement evidence-based nutrition education programs.

What is my goal as a transborder researcher?

The kind of transborder researcher I aspire to become is someone who bridges diverse perspectives gained through academic and professional experiences, connecting the field with academia, health with the environment, and the domestic with the international. I am committed to advancing my career as a transborder researcher who integrates knowledge across boundaries to address the food and environmental issues facing the global community.
